Beef and Spinach Bowls
A weeknight staple in our house are these easy beef and spinach bowls. It’s as simple as browning meat, heating rice and throwing some seasoning in. As an added bonus, it’s gluten free, dairy free, and kid friendly!
Ingredients:
1 lb grass-fed ground beef
2 cups raw spinach
2 cups white or jasmine rice
1/2 TBSP garlic powder
1 tsp ginger
1 tsp Redmonds Real Salt
1/2 tsp pepper
Coconut aminos (GF) or soy sauce
Instructions:
Brown the beef. Whlie the beef is browning, cook the rice.
Add garlic powder, ginger, salt and pepper to the beef mixture.
Add raw spinach and stir until cooked through
In a bowl combine rice, beef mixture and coconut aminos. Add salt to taste.
Tip: Double or triple the recipe. This makes great leftovers and/or meal prep lunches!
Tip: Buy frozen or microwavable rice to make this a quicker meal on busy evenings.
