High Protein Chicken Salad Recipe

Ingredients

  • 3 cups rotisserie chicken, chopped with scissors

  • 1 cup cottage cheese

  • 1–2 tbsp mayo (start with 1 tbsp, add more if needed)

  • 2-3 stalks celery, finely chopped

  • 1/2 cup red grapes, quartered

  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)

  • 1-2 TBSP lemon juice (start with 1tbsp, add more if needed)

  • ½ tsp garlic powder

  • Salt and pepper, to taste

Instructions

  1. In a large bowl, mix the cottage cheese and mayo until well combined.

  2. Add the chopped rotisserie chicken and stir to coat it evenly in the mixture.

  3. Fold in the chopped celery, quartered grapes, and dill.

  4. Season with garlic powder, salt, and pepper. Add the lemon juice and stir until everything is well mixed.

  5. Chill in the refrigerator for 20–30 minutes before serving to let the flavors meld together.

  6. Serve on sourdough, over mixed greens, or with fruit and raw veggies.
