Protein Buckeyes

Looking to create Christmas cooking traditions without all the added sugar? Here’s one of our families favorite recipes:

Ingredients

  • 1 cup natural peanut butter (no added oils)

  • 1 scoop vanilla or chocolate protein powder (we prefer Truvani vanilla)

  • 1-2 tbsp maple syrup or honey (optional, to taste)

  • 1 cup dark chocolate chips

  • 1 tsp coconut oil

Instructions

  1. Mix the Filling:
    Combine peanut butter, protein powder, and maple syrup/honey in a bowl. Mix until smooth and firm enough to roll into balls.

  2. Shape:
    Roll into 1-inch balls and place them on a parchment-lined tray. Freeze for 20 minutes.

  3. Melt the Chocolate:
    Microwave the dark chocolate chips with coconut oil in 20-second intervals, stirring until smooth.

  4. Dip:
    Using a toothpick, dip each ball into the melted chocolate, leaving the top portion uncovered. Return to the tray.

  5. Set:
    Chill in the fridge until the chocolate hardens.
