Protein Buckeyes
Looking to create Christmas cooking traditions without all the added sugar? Here’s one of our families favorite recipes:
Ingredients
1 cup natural peanut butter (no added oils)
1 scoop vanilla or chocolate protein powder (we prefer Truvani vanilla)
1-2 tbsp maple syrup or honey (optional, to taste)
1 cup dark chocolate chips
1 tsp coconut oil
Instructions
Mix the Filling:
Combine peanut butter, protein powder, and maple syrup/honey in a bowl. Mix until smooth and firm enough to roll into balls.Shape:
Roll into 1-inch balls and place them on a parchment-lined tray. Freeze for 20 minutes.Melt the Chocolate:
Microwave the dark chocolate chips with coconut oil in 20-second intervals, stirring until smooth.Dip:
Using a toothpick, dip each ball into the melted chocolate, leaving the top portion uncovered. Return to the tray.Set:
Chill in the fridge until the chocolate hardens.
