Easy Refrigerator Dill Pickles
Turn your garden cucumbers into delicious dill pickles in 15 minutes, or less! We make these all summer long, and they make such a great gift for friends and family too!
Ingredients:
10-12 pickling cucumbers
4 cups water
2 cups white vinegar
2 tablespoons salt (I prefer Redmonds Real Salt)
1 teaspoon organic cane sugar
1 tablespoon dill (per large jar)
1 tablespoon minced garlic (per large jar)
1/2 teaspoon pepper (per large jar)
Directions:
Wash and chop cucumbers and place them in a large mason jar
Prepare the brine by combining water, vinegar, salt and sugar in a saucepan. Bring the mixture to a boil and stir to ensure the sugar and salt dissolve. Remove from heat and cool to room temperature.
Layer the prepared cucumbers with dill, garlic, and pepper in the jar. Do not pack super tight as you want room for the brine. Finish by adding enough brine to cover the cucumbers.
Seal with an airtight lid and store in the refridgerator. The flavor is best if stored for one week before eating, and pickles last 4-6 weeks in the fridge.
