Protein Egg White Bites
A protein packed way to start your day! When opting for dairy, I recommend the brands Good Culture and Tillamok for their quality control and dairy standards.
Ingredients:
4 cups organic egg whites
2.5 cups mozzarella cheese
4 cups cottage cheese
2 tsp salt
1 tsp pepper
1 red bell pepper (chopped)
1 bunch of green onion
Directions:
Preheat the oven to 300 and spray muffin tin with cooking spray
Mix together cottage cheese, mozzarella, salt and pepper. Now add the egg whites and mix gently (do you not want air into the mixture).
Pour the egg mixture into the muffin cups, filling about 3/4 of the way
Add a sprinkle of red peppers, green onion and a pinch of mozzarella on top of each
Place the muffin tin in the oven for about 60 minutes. You want them to be lightly brown.
Store in a glass container in the fridge for 7 days, or freeze in a gallon zip lock bag. To reheat from frozen, wrap in a paper towel and microwave.
